I went for a run the other day, an easy four miles, and I found myself having to hold back at the end. Again.

 

Several years ago when William and I were first dating, we’d run together frequently, getting to truly know each other over our running-with-another-styles. Will was content to always keep it casual, slow and easy. My competitive streak had me unconsciouslessly always staying one step ahead with random surges thrown in whenever I felt good. I’d often laugh recklessly and pick it up a little more when he wanted to slow down. I tend to get faster as the miles add up while he likes to rush out at the beginning and then slow down. I’m stronger-willed. I usually set the pace. Despite our differences, we got into a habit of finishing each run with a little sprint to the end. It was never a set time or distance, just somewhere close to our finishing point, we’d glance at each other, mutter something like “race you to…” and take off. William usually won. It was so so fun.

Running hasn’t been so easy or joyful this year. I have been battling my body and mind this entire year. I finally figured out my mind has identified its body as perpetually injured. Despite the belief that I will eventually be injury-free, my daily thought pattern does nothing to support this mindset. Any time something new feels off, my mind goes into a two to six day anxiety party, in which I can focus on almost nothing else except the thing that is off, worrying about “what-if it…”, and then after those first few days have past, I accept the off-feeling as the new norm, and it becomes the problem. All of this happens before any doctor can actually identify anything is truly wrong. It is a bad pattern that I’ve finally acknowledged and am attempting to stop vicariously jumping into. I’ve also come to terms with the idea that my mind thrives on (and is perpetually sickened by) a stressful environment. And it doesn’t matter what is actually happening in life, whether my current circumstances are actually worthy of stress, my mind always finds something to be stressed about. For me, the link between mental stress and physical symptoms, in any myriad of ways, is real. I have accurately identified a whole host of physical ills I’ve suffered over the years that are linked to stress. I have a great doctor that supports my theories. It is crazy this mind-body connection. The good thing here is that I’ve finally acknowledged this internal battle and I know it is not the way I want to live.

 

Running is where I seek a lot of mental solace. And since my physical body has been somewhat out of commission all these months, my mind has freely been running havoc instead. After a substantial amount of crying and worrying and praying this year, asking Him repeatedly why he gave me this particular challenge to overcome, I was practically smacked in the face one day in adoration at church with the realization that this has been such a good year. I have had to stop running, at first physically and then mentally, and actually work through the baggage that I had been holding on to. I’ve had to stop, just sit, literally, and simply feel every thing I’ve spent my entire life avoiding feeling.

Deacon Anderson had a Carl Jung quote/paraphrase one Sunday in church that has been my truth this year. People will do anything, no matter how absurd, to avoid facing their own souls. We’ll eat, we’ll drink, we’ll play with our cell phones, we’ll have sex, we’ll throw ourselves into our work, we’ll exercise until we drop, we’ll buy stuff, we’ll do anything, anything, to avoid this journey and this struggle, to keep from embracing our shadow, he shared.

 

This year, I’ve sat with, cried with, yelled at, wanted to rip out and throw away, run with, forgiven, soothed, gotten to know, and finally, faced my soul. It has been the most difficult thing I’ve ever done.

 

It has been the best thing I have ever done.

 

And it is an ongoing, never-ending, daily practice. It is a complete lifestyle change to know and face my soul, to continue acknowledging it rather than running away. So far, it does not get easier with time.

 

And so, running. Running and work and blogging and food and family and making a home and being a sister, aunt, daughter, wife, cousin, friend, teacher, and mentor. And living. Above all, I want to live and experience peace in each moment, let all my worries and what-ifs and over-whelming, self-imposed schedule go, acknowledge but not engage with those thoughts that will always try to take over, and let them go. And again. Every goddamn day starting over.

When I let all my worries go, I realize I am happy. Despite whatever chaos I’ve brought on myself or the world has imposed, I am happy. There is joy when I write and joy when I pray. There is joy in my interactions, joy in throwing my schedule out and going with someone else’s plans. There is joy in running that has nothing to do with managing my body, that is no longer based on being able to withstand the pain for a little while, but actual joy in realizing that despite whatever might feel slightly off, my body does not have to be a battleground, and the last mile of a four or five or easy six miler feels good and I feel like sprinting it in to the end again–simply for the joy of it.

Big Tasty Winter Salad with Brussels Sprouts, Kale, Squash + Candied Hazelnuts

When it comes to holiday gatherings, I’m the salad person in my family. Every year I have somehow shown up to Thanksgiving or Christmas with Brussels sprouts–and then the relatives tell me they’ve spent their entire lives not liking them but they look forward to mine. I guess that is the highest compliment a vegetable-loving, on-a-mission-to-get-people-to-eat-their-veggies lady can receive. Spinning off the sweet dressing and candied nuts in my Pittsburgh Salad, I decided to throw all my favorite wintry salad things in a big ol’ Thanksgiving-sized bowl and feed people greens again this year. And it worked. I’ve made this salad a couple times since and it is tasty enough that I might take it to every social gathering between now and the end of winter squash season (that’s around mid-March for me). It is just that good.

1 bunch kale, stems removed and leaves chopped

1 small or 1/2 a medium winter squash, roasted and then cut into medium-large chunks

a small to medium handful of dried cranberries, raisins, or cherries, or a handful of each

1 lb. Brussels sprouts, bottoms and outer leaves removed and halved, if they are large

1 Tbs. olive oil

 

For the candied hazelnuts:

3/4 cup raw hazelnuts

3/4 tsp. olive oil

1/2 tsp. honey

1/8 tsp. salt

Cayenne pepper

 

For the vinaigrette:

2 Tbs. extra virgin olive oil

2 Tbs. balsamic vinegar

1 Tbs. whole-grain mustard

1 Tbs. honey

salt and pepper to taste

 

  • On a large baking pan, toss Brussels sprouts with a good drizzle of olive oil and sprinkle with salt and pepper. Roast for 15-20 minutes in an oven preheated to 350 degrees F.
  • While the Brussels are roasting, prep kale and put it in a large mixing bowl, along with the roasted squash and dried fruits. Once the Brussels begin to soften but still have a little crunch, remove them from the oven, and pour them atop the kale and give it a quick stir. This will begin to soften up the kale.
  • Spread the hazelnuts in a small baking pan or on the same dish the Brussels came off of, and toast until just beginning to brown, about 10 minutes. Remove and let cool slightly. Then, toss them with 1/8 tsp. salt and a good pinch of cayenne pepper. Drizzle with the 3/4 tsp. oil and 1/2 tsp. honey. Toss them all into the bowl with the Brussels and kale.
  • Make the vinaigrette by whisking the remaining oil, honey, mustard, and vinegar in a small dish. Add salt and pepper to taste. Pour it in small batches over the salad ingredients until you’ve dressed it with your desired amount.

 

 

Chai-Spiced Pear Oats

Several years ago, I stayed with a few girlfriends at a B&B run by Agnes, who lives on a farm off the western edge of Ireland. From the moment we arrived we were fed quite well, including dinner, which was fresh caught from the ocean by her son. We had a proper Irish breakfast the next morning with the traditional white and black puddings, fried tomato and egg, thick slabs of brown bread, muesli, yogurt, and then pots of tea. After I was stuffed as could be, I slipped into the kitchen to ask Agnes a question. She was just tidying up and there, sitting at a tiny table away from the guests, was her farmer husband in his wool socks, tucking into a homely and simple bowl of porridge.

 

I immediately wished I could take all of my breakfast back, forget my friends, and sit at the table with him eating homely oats and chatting about the first frost date, how much rain we’ve received, the work that needs done before the storm, and other farmer things.

 

 

 

If ever I fed people food for a living instead of words and ideas, I would feed them porridge.

It is the meal I most closely associate with the term comfort food, and the one I’ll gladly eat any time of day but especially at the end of a long and discouraging one. It is the breakfast I always hope is fed to me when I stay at a friend or relative’s house, and at home in my own kitchen, it is the one I love to change throughout the seasons with all variations of grains, fruits, and flavors. I’m especially partial to thick-rolled oats but lately I’ve also been experimenting with various ratios of amaranth, quinoa, buckwheat, and polenta.

And then I always seem to return to oats. Perhaps this is because I grew up on its simplicity and homeliness, eating it slowly on nearly frosty mornings at the same table I have now, as I listened to my dad talk about the weather and other farmer things in his wool socks.

Pomegranate + Hazelnut Moroccan Grain Salad

There was once a man who had a fig tree growing in his vineyard. He went looking for figs on it but found none. So he said to his gardener, ‘Look for three years I have been coming here looking for figs on this fig tree, and I haven’t found any. Cut it down! Why should it go on using up the soil? But the gardener answered, ‘Leave it alone, sir, just one more year. I will dig around it and put in some fertilizer. Then if the tree bears figs next year, so much the better; if not, then you can have it cut down.’

I have a plain black journal which I cart around for all things spiritual. It is a book riddled with inspirational sayings from homilies, scripture, from the girls in my prayer group, and messages I hear from prayer. I doubt the journal could be useful to anyone aside from me as it’s got thought-segments scattered randomly and the same phrases scribbled repeatedly throughout. Months ago, Father Ignacio stated, God is not like Amazon Prime. We have to wait, in one of his homilies. It is a phrase which has taken up considerable real estate these past few weeks.

 

As is usual when I need to work on something, signs appear from all sorts of corners with the same message. For the last couple weeks, I have had several reminders on perspective, of thinking about whose lens I am looking through, of being able to see my life as Jesus sees it, through His vision, and of rewriting the story I tell myself. Consistently at church, I hear the message to ask God the way and He will use you. I have been increasingly frustrated as I’ve been asking for guidance for months and (telling myself) I hear nothing. I sat for an hour this week and had an internal fight with God. Why are you not speaking to me?, I silently yelled. What do you want me to do? And then the quietest, softest answer:  Have patience. Trust in me. My immediate reaction was to act as if I hadn’t heard anything. Instead, I responded, but WHAT do you want me to DO!? Trusting and being patient sounds a lot like sitting around doing nothing when all I want is for my fig tree to be bearing figs.

 

I then came home and complained to William about the experience, of asking for guidance daily and hearing nothing, of being frustrated because He refuses to speak to me. William’s response was, perhaps you’re not looking at the situation the right way. Perhaps when you think nothing is happening, it is because His answer is not what YOU THINK it should be.

 

I can be incredibly stubborn. I ask for guidance but I only want to hear an affirmation that what I want is what I should want–is what I should be working on and is going to happen according to my schedule. I want clear, easily discernable boxes to check in a linear pattern marking the way forward. I want to know the daily labor will produce the desired results. I find it extremely difficult to entertain the possibility that He is answering and doing something in my life when it doesn’t look exactly like what I expect it to.

 

I look to my journal. His message to trust and have patience is written clearly, week after week, right next to the reminders about Amazon Prime. When I turn the pages back and see the same words time and again, I realize He’s been there responding all along. It is time to stop being frustrated and trust. It is time to rewrite the story I tell myself. I need to stop looking at my life as an unbearing fig tree. I need to spend less mental energy tearing it down and more of it in adding fertilizer.

 

God is not like Amazon Prime. We have to wait.

 

 

Moroccan Grain Salad with Pomegranates + Hazelnuts, adapted from Green Kitchen Travels

I pulled the last two eggplants from their stems the other morning. It was a beautiful morning to be in the sunshine, to pull the last of the season’s purple jewels from their life cord, to traipse around in my mud boots after months of heat and dry ground. It poured rain the day before and since and the ground has been soft. Most of the summer vegetables are finally done. This salad is a snapshot of the present season, a mix of old and new. Combined with those last two eggplants, roasted sweet onions and handfuls of parsley and mint, there are this season’s hazelnuts and the seeds of a pomegranate tossed in. I made this salad for the first time over the Labor Day holiday for our family reunion. That first version was slightly different with a couple zucchini sliced into rounds and roasted. It was a big hit and I promised to share the recipe. Now that summer is well and truly over, I’ve thought about how to carry this salad’s flavors into the autumn and holiday season as it would do nicely as a side during a celebration meal. I’m picking up a load of winter squash this weekend and I imagine some roasted delicata or kabocha squash would make for an even tastier mixture paired with the cinnamon-infused grains, herbs, pomegranates and hazelnuts. 

1 large or 2 medium eggplants

1 medium onion

2 Tbs. olive oil, plus extra for drizzling

1 garlic clove, crushed

salt

1 cup equal parts quinoa and millet (or all of either one)

2 cups water

3/4 tsp. cinnamon

juice of 1/2 a lemon

a handful of mint leaves

a handful of parsley

1/4 cup raisins

1 pomegranate, deseeded

1/2 cup toasted and coursely chopped hazelnuts

  • Preheat the oven to 400 degrees F. Chop the eggplants and onion into small pieces. Place them on a large baking pan and drizzle with a small dose of oil. Sprinkle with salt and roast in the oven until soft and slightly burned around the edges, about 15 minutes. Remove the vegetables from the oven and place in a large serving bowl. Add the olive oil and garlic and set aside.
  • Meanwhile, cook the quinoa and millet. Place the grains in a small saucepan and add the measured water, cinnamon, and 1/2 teaspoon salt. Bring to a boil, reduce the heat immediately, and cover. Cook for 15-20 minutes until the water is absorbed.
  • To assemble the salad, place the cooked grains in the bowl with the roasted vegetables. Add the lemon juice, herbs, raisins, pomegranate seeds, and chopped hazelnuts. Give everything a good stir to evenly mix. Serve at room temperature or warm slightly.
